In honor of St. Paddy's day, I wanted to round up some recipes from my favorite bloggers using my #1 favorite food--potatoes--which just happens to be synonymous with Ireland... at least from my American perspective. Do Irish people actually eat as many potatoes as people over here tend to imagine that they do? Any input here would be much appreciated.
Anyway, from potato salad to latkes, to my potato bimbimbap (the bap part of that means "rice," so I really should call it bimbimpotato. Kind of love that, kind of hate it.) here are a handful of super tasty taters that you should be cooking up all year round!
Or enjoy them with your green beer. Or both. :)
